Directions. Heat olive oil in a pot over low heat and cook onion until soft and translucent. Add garlic and cook until fragrant, about 1 minute. Remove soup from heat and cool slightly. Remove bay leaves and basil. Puree tomato soup with an immersion blender until smooth.
Instructions. Add the chopped onion and crushed garlic to a pot with the coconut oil and sauté. Add the whole peeled tomatoes, peeled and chopped potatoes, sugar and 2 cups of vegetable stock. Bring to the boil and then turn down to simmer until all the ingredients are soft and cooked (around 30 minutes).
